Gajar Halwa

- From Our Kitchen

A classic Indian sweet, Gajar Halwa is a festive special at most houses! Let’s see how this delightful sweet treat is made from scratch.

  • 4 cups of grated carrots
  • ¼ cup ghee/clarified butter
  • ½ cup khoya/mawa
  • 10 cashew nuts (Kaju) chopped
  • 10 almonds (Badam) chopped
  • 3 cups of milk
  • ¾ cup Madhur Sugar
  • ¼ tsp cardamom (Elaichi) powder

  • Heat ¼ cup ghee/clarified butter in a kadhai.
  • Fry chopped almonds and cashew nuts separately in the ghee.
  • Remove the fried dry fruits and add some more ghee to the kadhai.
  • Once the ghee is heated, add the grated carrots and saute for 5 minutes.
  • Pour in 3 cups of milk into the sauteed carrots and let it boil for 10 minutes. Stir occasionally.
  • Now add ¾ cup Madhur Sugar and cook until the sugar dissolves and thickens.
  • Sprinkle cardamom powder over the mixture and mix well.
  • Cook the mixture well until the halwa thickens and the ghee releases from the sides.
  • Add khoya and mix well.
  • Garnish the halwa with the fried almond and cashew nut slivers.
  • Serve the hot Gajar Ka Halwa.
