Balushahi

Crispy on the outside and soft on the inside, learn this traditional Balushahi recipe here.

For Sugar Syrup

  • 1 cup Madhur Sugar
  • ½ cup water
  • 1 pinch of saffron (Kesar)

For Balushahi

  • 1 ¼ cup desi ghee (Clarified Butter)
  • 1 cup all purpose flour
  • ½ tsp cardamom powder
  • ¼ cup curd/yogurt
  • ¼ tsp baking soda

For Garnishing

  • Almonds & Pistachios (chopped)

  • Take all purpose flour and add baking soda to it. Sieve the ingredients to remove any lumps.
  • Take a pot and add sugar and water to it. Heat this mixture till it thickens to a one string consistency.
  • Add a pinch of kesar/saffron strands and mix well. Keep this aside.
  • Take a big mixing bowl and pour ghee into it.
  • Now add curd and mix well.
  • Add the mixture to the sieved flour and mix well. Knead it into a soft dough.
  • Cover the dough with a damp cloth and keep aside for 45 minutes.
  • Knead the dough a little again and divide it into equal portions.
  • Make small balls by twisting the dough.
  • Make a slight dent in the centre.
  • Heat ghee/oil in a kadhai. Deep fry the dough balls on a low flame till it is golden brown.
  • Drain the excess ghee/oil.
  • Now immerse the Balushahi in the prepared sugar syrup for a few minutes.
  • Finally garnish it with some chopped almonds and pistachios and serve it!
